Step 1: Prepare cucumbers.

There are no greens in the recipe, and the marinade does not need to be cooked either - and this is very convenient. You can preserve whole cucumbers or cut them into circles, add tomatoes, bell peppers, zucchini, onions.

This recipe has a very interesting history. It was invented back in the days of total shortages, when pickled cucumbers under the Globus brand disappeared from the shelves instantly. In order not to waste time searching and queuing, cucumbers, which taste like a scarce imported product, began to be rolled up at home.

The recipe was called "Bulgarian Pickled Cucumbers".

For a 700 gram jar we will need:

Cucumbers (whole or chopped) - how much will go in

A few peas of allspice

1-2 garlic cloves

1 bay leaf (optional, it's a matter of taste)

Half a teaspoon of mustard seeds

A teaspoon of salt (without a slide)

Two teaspoons of sugar (no slide)

40 ml. vinegar 9% (I add 6%)

Cooking cucumbers, cut into slices

Pour cucumbers for several hours with cold water - then they will turn out strong, crispy. Then wash well and cut into pieces.

We put everything in banks

At the bottom of clean jars (I sterilize over steam), we put all the seasonings, garlic, dill. We fill the jars with cucumbers.

Now we pour salt and sugar into each jar, pour vinegar.

Fill the jars with cold water (not boiled!) Directly from the tap.

We sterilize

We put in a pan for sterilization. Be sure to put gauze on the bottom (it must be folded in several layers) or a napkin, a kitchen towel.

Cover jars with clean lids. Pour in cold water so that it reaches the shoulders of the jars.

Very important so that the water in the jars and in the pan is the same temperature - then the vegetables will evenly warm up.

Let the water boil. From the moment the water boils in the pan, we count the time - 700-gram jars are sterilized for exactly 5 minutes. If you do it in a liter jar - 7 minutes, you need to sterilize a 3-liter jar for 15 minutes.

We take out the banks and immediately roll them up. Turn upside down, if the sugar has not completely dissolved, shake the jar vigorously and set to cool.

Prepare the marinade (boil water with sugar and salt, pour in the vinegar after removing it from the heat) and immediately pour it over the chopped cucumbers. Cover jars with lids and seal tightly.

Turn them over and wrap them in a blanket until they cool. In winter, cucumbers prepared in this way will only be enough to open, present immediately to the table.

We need:

  • Cucumbers - 4 kg
  • Onion - 500 g
  • Dill - 1 bunch (large)
  • Salt (rock) - 3 tbsp. spoons (without a large slide)
  • Sugar - 5-6 tbsp. spoons (without a slide)
  • Vegetable oil - 250 ml
  • Table vinegar, 9% - 200 ml

Important details:

  • From this amount of products, about 4.5 liters of blanks will be obtained. We advise you to pack in jars up to 1 liter, preferably 500-750 ml.
  • If you are afraid to take a lot of products for the first sample, just divide the amount of ingredients by 2.

Preparing vegetables.

We cut off the ends from the cucumbers and just in case we try if there is any bitterness. We cut cucumbers into rings of small thickness 5-8 mm.

If you come across a very large (thick) cucumber, you can cut it in half lengthwise, and already cut the halves across into semicircles of the thickness indicated above. In the finished salad mass, such differences in shape do not make the weather and are practically not noticeable.

Peel the onion and cut into thin quarter rings. Finely chop the dill.

We combine the vegetables in a large bowl (enamel or stainless steel) and mix.

We insist vegetable cutting.

Add salt, sugar and vegetable oil to the cut. Mix well, cover with a lid and leave to infuse at room temperature - for 4-5 hours.


Bring to a boil and cook briefly.

After the specified time, cucumbers will give a lot of juice.


We put the vegetables on the stove over high heat and bring to a boil. As soon as it boils, add vinegar.


After adding vinegar, cook the salad over moderate heat. literally 3-4 minutes, stirring constantly. We carefully monitor the color of cucumbers. The case when it is better to underdo it a little than to digest it.

As soon as the vegetables change color from bright green to protective, immediately remove from heat. Otherwise, the salad will be too soft and less tasty.


We close banks.

After removing from heat, spread the salad hot in dry sterilized jars. Favorable volume of 500-750 ml. We tamp the vegetables tightly, gradually add the marinade and try to fill the jar to the top.


We roll up under any convenient cover for long-term storage. We turn over, but do not wrap, so that the vegetables do not turn out to be excessively soft.


After cooling, put in a dark cabinet.

How to diversify cucumber salad for the winter with onions

If you like, you can add finely chopped garlic, bay leaf and black pepper. We recommend always using freshly ground black pepper. There is often little spice in the purchased powder (the spice quickly fizzles out from storage in this form). And if you get to a dishonest manufacturer, then even dust of unknown origin in a pack, alas, is not uncommon.

In addition to onions and greens, Bulgarian pepper will fit well into a simple, but very appetizing cucumber salad for the winter. The amount of onion in this preparation depends on preferences and can reach 40-50% of the volume of cucumbers.

Mustard cucumbers for the winter: a recipe for slices with vegetable oil

A simple but very tasty recipe for cucumber slices. The recipe is designed for 2 kg of long-fruited vegetables of a standard diameter.

For a delicious preparation you need:

  • cucumbers - 2 kg;
  • vegetable oil - 110 ml;
  • vinegar - 100 ml;
  • salt - 50 g;
  • black pepper (ground) - 5 g;
  • mustard grains - 10 g;
  • garlic 2-3 cloves.

You need to prepare like this:

  1. Wash cucumbers and cut into thick circles (up to 2 cm). Pour into a large bowl or pot.
  2. Pour spices and oil to the cucumbers, grate the garlic or push through the garlic press, add it there.
  3. Mix everything well and let stand. Cucumbers in this preparation should stand for at least 3 hours at a temperature of 18-22 °.

  5. Cover with a lid and send to sterilize. For a jar of 1 liter, it takes 10-15 minutes, for a half-liter - 5-8.
  6. At the end of sterilization, roll up the jars; you do not need to wrap them with a blanket. From the specified amount of ingredients, 4-5 cans are obtained with a capacity of 0.5 liters.

If canned cucumbers undergo a sterilization process with a blank inside, then it is not necessary to sterilize the jars before laying the ingredients.

Cooking method:

1. Using a new sponge, rinse the cucumbers well. We cut them into circles (approximate thickness 5 mm).

2. Using a knife, peel the carrots and grate it on a coarse grater.

3. Mix the vegetables in one enameled, large saucepan.

4. Pour salt 80 gr., Sugar 120 gr. and a mixture of peppers, pour in vinegar and vegetable oil. Mix well and leave in a cool place for 2 hours.

5. At this time, we will sterilize the jars. The sterilization method is indicated above.

6. After 2 hours, mix the salad and put them in jars.
