This dish is perfect for dinner. It only takes half an hour to make. Pasta with mushrooms can be cooked both in a lean and quick version. But in any case, you will get an inexpensive, tasty, healthy, easy and nutritious meal.

For the recipe you will need:

Necessarily:
500-700 g fresh or canned mushrooms
0.5 onion heads
100-200 g pasta (spaghetti)
salt

Desirable:
Vegetable oil
1-2 garlic cloves
1 bunch of parsley
0.5 teaspoon lemon juice
pepper

About products.

Mushrooms- fresh, frozen, dried, canned (only not salted and pickled). It is best to use a set of different mushrooms. I took a 300 gram pack of frozen mushroom mixture, which included mushrooms, boletus, boletus and boletus, and a 400 gram jar of canned champignons.

Pasta- it is better to use something like spaghetti or noodles. But horns, shells, feathers, etc. are quite suitable.

Pro onion and salt nothing special to say.

Vegetable oil we need it for frying mushrooms, but if you strictly observe the fast, you can do without it.

Garlic, parsley, pepper and lemon juice it is desirable to add for a richer taste, but it is quite possible to do without them.

Cheese and butter not suitable for a lean recipe, but will be very useful in normal cooking.

Cooking:

Put the mushrooms in a pan, fry for 15 minutes in vegetable oil, stirring occasionally. If the pan is non-stick, you can do without oil.

At this time, put the pasta to cook. Boil water and put them in boiling water. There is nothing complicated here.

Cut the onion into half rings, chop the garlic finely. Add to mushrooms. We mix. If you don't like garlic, don't use it.

Also, do not forget to stir the pasta several times so that it does not stick together.
In about 10 minutes they should be cooked.

We don’t drain the pasta, but simply put it in a pan with mushrooms, adding a few tablespoons of pasta “broth”. This is necessary so that our dish is not too dry.

We mix. Slightly, literally a minute or two, keep on fire and remove. In principle, the dish is ready and can be eaten in this form.

Sprinkle with ground black pepper and squeeze with half a teaspoon of lemon juice.

In the usual preparation of pasta with mushrooms, it is advisable to season with two tablespoons of butter and grated cheese. All these additions are made to the dish already removed from the fire.
This recipe is interesting precisely because after cooking, the taste of the dish can be modified and enriched by the simple addition of some products.

Sample calculation: mushrooms ~ 100 rubles, pasta ~ 20 rubles, other products (except for cheese and butter, which I did not use) ~ 30 rubles. Total for 3-4 servings ~ 150 rubles.

So today we have a hot dish.
Pasta with mushrooms and green beans.
Mushrooms we have frozen champignons sliced ​​(400 grams) in a package. After their preparation, it seems to me, only 200 grams remained.
Frozen green beans, I used half a pack. Colored pasta, I used half a pack, 250 grams. We also need mustard and ketchup, optionally various seasonings that you have at home.

Let's start. Put water on to boil to cook pasta. We heat up a large frying pan with a spoonful of vegetable oil in order to fry (stew) our mushrooms.


put the whole pack of mushrooms in the pan (unfortunately there is too much ice), so without covering the lid, simmer and fry our mushrooms almost until cooked (20-25 minutes).


While our mushroom water is evaporated, our pasta is safely cooked. Salt the pasta just a little bit.


Cook the pasta for 10 minutes, then drain the water and rinse our pasta under cold water. and leave to drain in a colander.


Add the beans to the pan while our mixture is stewed to prepare the sauce. take a small bowl, 2 teaspoons of mustard, then 6 tablespoons of ketchup, a little soy sauce (instead of salt), pepper, seasonings, whatever you want, add half a glass of water and mix everything thoroughly.


add our sauce to mushrooms and beans, mix and simmer everything together for 5 minutes, then add our pasta and simmer for another 5 minutes. The dish is ready.

Lenten pasta with mushrooms is good not only in Lent. Of course, the taste of the pasta will depend on the variety of mushrooms and the sauce with which you decide to serve it. I cooked lean pasta with mushrooms and tomato sauce, but we like pasta with mushrooms and pesto sauce more.

Pesto sauce, of course, can be bought ready-made in the store, but it will be with the addition of Parmesan cheese, and we won’t be able to make lean pasta. I, on the other hand, make a non-classic lenten pesto sauce using only basil (30 g), olive oil (1 tbsp), pine nuts (20 g), garlic (1 clove), plus salt to taste. I punch all the ingredients in a blender, and the lean pesto sauce is ready. You can make this sauce for the future, it is perfectly stored in the refrigerator in an airtight jar for up to 2 weeks.

So, let's prepare the products according to the list and prepare lean pasta with mushrooms. You can use any pasta and any mushrooms. I have spaghetti and mushrooms.

IMPORTANT: the dish is prepared quite quickly. Immediately put a large pot with 2 liters of water on the fire, and as soon as the water boils, salt the water and send our pasta to boil. See pasta packaging for cooking time.

While the pasta is cooking, prepare the sauce. Cut the onion into small cubes, clean the mushrooms and cut into plates.

Pour vegetable oil into a frying pan, heat it over medium heat, add onions and mushrooms and fry vegetables for 10-12 minutes.

Let's put our non-classic lenten Pesto sauce to the fried mushrooms with onions.

Mix the sauce with vegetables and simmer everything together for another 5 minutes.

We discard the finished pasta in a colander so that all the liquid is glassed.

Add the pasta to the skillet with the mushroom pesto sauce and mix all the ingredients well. Heat everything together for a couple more minutes and remove the pan from the heat.

This mushroom pasta is delicious. I offer a recipe with vegetable sauce, thanks to which the dish looks bright and appetizing. If you buy pasta that does not contain eggs, then you can cook it in fasting. If you are not fasting, then choose any kind of curly pasta and cook with pleasure! Last time we already prepared a lean dish -.

A few tips. To make the sauce not too thin and stick well on the pasta, add carrots. Grate about half of the carrots, and cut the rest into pieces.

It is allowed to thicken the sauce with flour, but before adding it to the vegetables, the flour must be diluted with a small amount of cold water, stirred, rubbed so that the mass resembles a thin slurry. Add to sauce and stir immediately.

The taste of tomato sauce will be softer if you add a little cream or sour cream at the end of cooking. After adding sour cream, mix and turn off the heat, otherwise it will delaminate with strong heat. Do not bring the sauce with the addition of cream to a boil, warm it up and turn it off.
The amount of dry pasta is taken at the rate of 80-100 gr. per serving. A standard package (400 gr) is just enough for a family of four.

Ingredients:
- figured pasta or spaghetti - 300-400 gr;
- fresh champignons - 250 gr;
- onion - 2 pcs;
- Bulgarian pepper - 1 large fresh or a handful of frozen cubes;
- zucchini - 1 small or two handfuls of frozen slices;
- vegetable oil - 4 tbsp. spoons;
- ground dried paprika - 1 teaspoon;
- basil, oregano, black pepper - add everything to taste;
- tomatoes in their own juice - 400 gram jar;
- salt - to taste;
- sugar - 1-2 pinches (to taste);
- green peas or fresh herbs - for serving.

Place a saucepan over medium heat with plenty of water for the pasta. While it boils, wash, peel and cut vegetables. Onion cut into small cubes. Mushrooms must be poured over with cold water, we update the cut on the legs. We cut not very finely, in pieces or plates. Cut small mushrooms in half.





We heat up all the oil, pour the onion and fry until the pieces are light and transparent.





Slightly increase the heat, fry the onion until a golden edge appears on the edges. Throw out the pepper. Fresh must first be cut into pieces, and frozen is sent to the pan without defrosting, as soon as it is taken out of the package.





Fry for a few minutes and add zucchini (zucchini is also suitable). Again - cut fresh into circles and then cut each into segments or cubes. And the frost is poured out as soon as it is removed from the freezer.







Fry vegetables for five minutes, if frozen, then a couple of minutes longer. Add mushrooms, increase the heat and evaporate the mushroom juice so that the mushrooms can be browned. At the same time, we look after the water in the pan - if it starts to boil, salt and lay the pasta (spaghetti). Cooking time is indicated on the package.





After the liquid has evaporated, reduce the fire, season with spices and continue to fry the mushrooms for about five minutes.





Cut the tomatoes in their own juice into slices or knead with a fork and spread to the vegetables along with the juice. Salt to taste. If necessary, add a little sugar to muffle the acidity of the tomato. Cook the sauce over medium heat until it thickens a little.





In the meantime, the pasta is cooked, we throw it into a colander. We do not wash. Spray with vegetable oil, cover.







Water drained from pasta can be added to vegetables with mushrooms if the sauce is too thick. Warm up and turn off.





There are two ways to serve pasta with mushrooms and vegetable sauce. The first is to mix everything in a pan, warm it up and serve. The second is to serve the sauce and pasta separately so that everyone can take as much as they need. When serving, you can add fresh herbs or green peas to the pasta.

Cut the boiled mushrooms into strips and, at the same time, rub the garlic on a fine grater.

Cook pasta until cooked in salted mushroom broth (if it is not enough, add water), then throw it away in a colander.

AT frying pan send mushrooms and garlic to the onion with carrots, fry them for a couple of minutes, and then add the pasta there and mix everything. Salt, if necessary.
