The tandoor oven is a multifunctional device. And most importantly, not only specialists can build it. Self-construction of the furnace is also possible.

What is a tandoor

  • The tandoor is a large clay cauldron, turned upside down, in the bottom of which there is a small hole.
  • The clay part of the furnace is lined with bricks from the outside, and the space between the brick and the edge of the vessel is filled with clay, sand or salt. They help keep the heat in.
  • The design of this is such that in its lower part there should be a hole for blowing.

How it works

A real tandoor is made from slightly different materials, but in modern conditions the listed components are best suited for this.

Initially, the type of tandoor is selected - ordinary (ground) or earthen, horizontal or vertical. The most common ovens are vertical.

  1. It is necessary to prepare a pit for the furnace, based on the fact that the height will be 1.2 m plus the foundation. The bottom, or foundation, is laid out of brick in one layer. An asbestos-cement pipe is brought to the prepared foundation, which is a kind of blowing. The edge of the pipe should be located among the bricks of the first row.
  2. From above, the masonry must be covered with clay. The tandoor is assembled in a similar way, except for the outer brick cladding. The soil will act as a lining here.

The walls of the furnace itself must be laid out of refractory bricks, with the bricks shifted inward to form an upper cone-shaped dome. Outside, the masonry should be coated with clay, and after it dries, the space between the soil and the walls should be carefully covered with clay and sand. The furnace must also be tempered with fire.

Anyone who likes to relax in the country cannot but love barbecue. What could be tastier than meat grilled on coals, poured over with fragrant sauce, and flavored with a pinch of oriental spices? The answer is simple - only meat baked in a brick tandoor.

A brick tandoor is a Turkish oven that allows you to cook simply incredible kebabs. The secret is that the meat is baked as evenly as possible. A similar effect can be achieved due to the balanced distribution of heat.

You, probably, more than once had to deal with a situation when some pieces in a barbecue were fried to a black crust, while others were almost raw. The fact is that the coals under the skewers are located unevenly and also have different temperatures. The result of such baking is obvious.

A completely different thing is a brick tandoor. The unique design of the oven allows you to forget about undercooked meat. Each piece will be exceptionally tasty and crispy. Moreover, in the tandoor you can not only bake lamb, veal or pork. You can make delicious oriental cakes in it. Which will not only pamper your family and friends with exquisite taste, but will also be beneficial to health.

What is a tandoor

This oven is similar to most structures of this type, but has some differences. The main material of the inner surface is ceramics. Coal, brushwood or wood can be used as fuel.

In appearance, a brick tandoor resembles an earthenware jug lined with bricks. The fuel is placed directly inside and ignited. As soon as the tree turns into coals, kebabs are laid inside the tandoor. They can be placed with a sharp end on the foundation or hung by a hook on a prepared perch.

Important ! The indisputable advantage of a brick tandoor is the long-term preservation of heat. This allows you to make more than one batch of delicious baked meat.

This stove came to us from distant Mesopotamia and later became extremely popular among the peoples of Asia. As a result, many oriental cuisines hard to imagine without this miracle machine.

How does it work

Consider an example of a classic Uzbek brick tandoor. In appearance, such a furnace can be compared with a clay cauldron. That's just it turned upside down, changing the bottom and top places.

At the bottom there is a special hole, it is also called blowing. The clay base is traditionally lined with bricks. A small layer of air forms between the clay base and the brick. It must be filled with salt or sand. The first option is preferable.

Coal is placed inside through the top hole. There are also variants of a brick tandoor with a side hole, but in the traditional Uzbek version, this design is practically not used.

Important ! Do-it-yourself brick tandoor has one significant drawback. Ash has to be removed through the upper hole, and this is not very convenient (this does not apply to portable structures).

For greater convenience of cooking barbecue in the Uzbek version, there is a special grill. Of course, you can just as well put vegetables or pieces of fish on it. Equally good baking is guaranteed.

Attention ! If you make a brick tandoor with your own hands, then you can cook food in it for 6 hours after one kindling.

The secret of such incredible heat-saving characteristics lies in the materials used to create the structure. All of them have phenomenal properties for the accumulation of heat. With due diligence, the oven walls can be heated up to 400 degrees Celsius.

If you are cooking cakes, not meat, the walls will first need to be cleaned of soot and ash that could have accumulated from previous kindling sessions. It is in a brick tandoor that you can cook Uzbek flatbreads that are so popular now.

Types of tandoor

The type of tandoor primarily depends on the place of its installation. Depending on this parameter, the following varieties are distinguished:

  • pit tandoor,
  • portable tandoor,
  • ground tandoor.

We will consider the process of building a ground-based brick tandoor. The fact is that the pit tandoor is mainly used for space heating, and the portable one is a kind of variation of the usual barbecue.

Step-by-step instructions for building a tandoor

Training

Any important project begins with preparation. Of course, from the point of view of building science, a brick tandoor cannot be called a complex structure. However, to create a durable and easy-to-use oven, you need to carefully prepare.

The preparatory process begins with the collection the right materials. Since there are several designs of brick tandoor, then basic set can be very different. In our case, it includes:

  • one hundred and fifty kilograms of sand and gravel;
  • cellular grid (each cell 5 cm) - two square meters;
  • six or seven kilograms of cement M40050;
  • asbestos fiber - six kilograms;
  • fireclay bricks 50-70 pieces;
  • refractory paint 1 liter;
  • fiberglass reinforcement of six millimeters in cross section (at least 15 meters);
  • refractory mixture for masonry - 20 kilograms;
  • steel wire with a cross section of 3 millimeters -15 meters.

When the entire set of materials for creating a furnace is assembled, you need to take care of a set of tools. Most of them can be found in the back room of any country house, but some will still have to be purchased. To build a brick tandoor with your own hands, you will need:

  • plaster rule,
  • a container in which concrete will be mixed,
  • putty knife,
  • Bulgarian,
  • diamond wheels for ceramic work,
  • paint brush.

As you can see the list necessary tools not very long. Assembling this kit is not difficult.

Foundation

The brick tandoor will work in the open air. Therefore he needs solid foundation, which can provide a stable position of the structure. A lot depends on the soil on which the building will be built. If the soil is clayey, you will need a reinforced foundation.

The best option for working on heavy soils is columnar foundation. If the soil is light and consists mainly of sand, simply cast a monolithic concrete slab. This will be more than enough.

The area of ​​the brick tandoor will be 100 by 100 centimeters. To withstand such a design, the thickness of the plate must be at least 10 centimeters. Along the entire perimeter of the foundation, you need to remove the soil 15 cm deep.

Important ! In the corners of the future plate, you need to make recesses of 70-90 cm. Their diameter should be no more than 12-15 cm.

After the holes in the corners are drilled, it is necessary to reinforce them. Here we need a diameter of six millimeters. At the end, the steel structures are poured with concrete.

The recipe for creating concrete of the desired consistency is as follows: take three parts of sand, pour one part of gravel (fraction size up to 1 cm) and the same amount of cement with a grade of no worse than PC 400. As a result, the batch will resemble thick gray sour cream.

It is very important to correctly calculate the amount of solution needed for pouring. It is best to focus on the pit. To prevent discrepancies in levels, use formwork. Lay it at the bottom of the pit five centimeters high. In order not to waste time hammering together wooden structures, take a tare tape.

At the bottom of the pit you need to pour sand. The height of the layer cannot exceed the height of the formwork. Sand is watered. This prevents the formation of cavities. Only then can the formwork for the monolithic slab be laid.

Important ! The layer of sand in the foundation plays the role of a damper cushion.

Do-it-yourself formwork for a monolithic slab under a brick tandoor is best made from ordinary roofing boards. Their width should be exactly 15 centimeters, ten of which are buried in the ground, and only five rise above it. A reinforcing mesh is laid on the sand.

Important ! Before pouring concrete, everything must be leveled with a level.

The concrete setting time is at least 72 hours. Ideally, you should wait seven days before installing the tandoor oven on a new foundation. If the pouring takes place in the summer, then the foundation must be moistened with water from time to time to prevent drying out and, as a result, the formation of cracks and chips.

Base

For the base you need fireclay bricks. Please note that the combustion temperature of coal is very high and ordinary red fired clay blocks may simply not withstand such a load.

Fireclay bricks not only have outstanding refractory properties, they also do not absorb moisture and are dense enough to support the weight of a tandoor.

Another important advantage of fireclay bricks is its resistance to temperature extremes. That is why it is ideal for creating outdoor oven tandoor. Such a brick perfectly tolerates frosts and does not crack with the advent of warming.

The base of the furnace must be made in the shape of a circle. To do this, take a suitable template and outline it with chalk. The diameter of the pattern is exactly 75 centimeters. Lay out the bricks in order. And only at the end, using a cutting wheel, cut off unnecessary parts and corners, forming an ideal base.

Attention ! On the concrete base you need to put the roofing material. It will provide reliable waterproofing.

Take a refractory kiln mixture for fireclay bricks and mix it thoroughly. Then, using a spatula, apply it to the roofing material.

The rule for masonry is made with the expectation that the base of the brick tandoor should correspond to its height. The ratio of the neck to the base is 1/3. To assemble the rule, you will need a pole at least one meter high. Base length 30 cm.

Attention ! The step between the guides should be 25 centimeters.

To make a pattern, take a piece of plywood. Ideal bed slat. The part on which the mattress is laid.

We make the walls of the tandoor

Bricks must be laid vertically. Therefore, you need to spend a sufficient amount of mortar so that the structural elements are firmly held together. The inner edges of the tandoor bricks should go close to each other.

Important ! All seams must be carefully coated with a solution.

The first row of brick tandoor is pulled together with steel wire. After the structure is fastened, the ends of the wire are twisted and hidden in one of the seams. Do the same with the second and third row.

In the second row of a do-it-yourself brick tandoor, the bricks are cut into a wedge. In this case, the inner faces are stacked as tightly as possible, the outer ones, in turn, are carefully smeared with a solution.

After the construction of the main brick tandoor structure is completed, you can start plastering. To do this, you will need a special oven mixture. Its thickness should not be less than 10 mm. The top edge is made in the form of a roller.

Wait for the layer of plaster to dry. For this entire period, the brick tandoor is covered with a cellophane film. This precaution is necessary to protect the structure from harmful external factors such as rain and direct sunlight.

Important ! Excessive heat can harm an unfinished brick tandoor just as much as high humidity.

After the plaster has hardened, it will be necessary to cover the surface with acrylic fireproof paint. You can also use whitewash. Before use, it is necessary to clean the interior of the brick tandoor from dirt and sagging. For this work, a special broom is ideal.

Construction of a traditional tandoor

First, a few words about what a tandoor is. This is an old-fashioned oven without a chimney, located outside and designed for cooking and baking according to oriental recipes- cakes, pita bread, samsa and so on. What the device of a stationary stove looks like is shown in the diagram.

What does a classic tandoor oven consist of:

  • foundation - reinforced concrete slab;
  • a clay firebox in the form of an amphora without a bottom, closed on top with a metal lid;
  • hearth part and outer walls made of bricks;
  • between the inner and outer walls there is a filler made of heat-intensive building material (sand, fine gravel);
  • at the bottom of the firebox there is an iron grate and an ash chamber with a blower door.

The principle of operation of the tandoor is similar to the Russian stove: the flame of burning firewood heats thick walls that retain heat for a long time. Due to which, after the fire is extinguished, homemade dishes of meat and flour are prepared: shish kebab, kebab or flat cakes (according to the old technology, the dough sticks to the inner surface of the firebox).

Reference. Similar commercially manufactured portable stoves are commercially available. They have a grill (as in a barbecue) and electric heating of the chamber.

We prepare building materials

To make a foundation and build a furnace, you will need the following materials:

  • a ready-made ceramic vessel for a tandoor furnace, resembling a pot without a bottom;
  • ceramic brick, preferably solid;
  • clay and sand for masonry mortar;
  • grate and ash pan door;
  • metal for the manufacture of the cover;
  • sand or fine gravel - to fill the gap between the walls;
  • cement M400, rebar and crushed stone - for pouring the foundation.

Note. It is quite difficult to make an internal ceramic insert shown in the photo with your own hands. If you can’t find it on sale, you will have to build a budget option tandoor with clay coating, as described below.

The amount of building materials depends on the dimensions of the furnace, which are chosen arbitrarily. To correctly lay out the fuel chamber with convex walls, it is necessary to maintain the ratio of the diameters of the hearth and the upper opening, as shown in the drawing.

If you plan to use the tandoor at the weekend, then do large structure meaningless. Feel free to reduce the dimensions indicated in the drawing by 1/3, or half. The finished insert - an amphora does not have to be bricked around in a circle, the body can be built in a square shape, which is done in the photo.

Reference. It is allowed to lay a stove made of fireclay bricks and refractory clay, but at a price the construction will cost much more.

We fill the foundation

Since any brick oven is a heavy structure, it cannot be installed directly on the ground. Before making a tandoor suburban area, prepare the concrete base according to the step-by-step instructions:

Building a stove

To protect a home-made brick tandoor from moisture from the side of the foundation, cover the concrete surface with a double-folded roofing material, and then proceed to construction. The order of work is as follows:


Advice. When adding sand to the solution, make sure that the sample does not begin to crack when squeezed into a cake - this is a sign of a lean solution.

A cake is made to test the solution

To give the firebox a convex shape, use the wooden template shown in the photo. It is easy to put together from wooden planks, checking the angle of inclination of the support rail according to the drawing.

When laying the inclined walls of the tandoor, it is better to cut the inner corners of the bricks. It’s easier to work with an internal clay coating when the structure dries, which we will discuss later. The construction process is shown in more detail in the video:

Finishing the firebox and ignition

According to the old technology, the tandoor firebox is supposed to be coated with a solution of clay, sand and sheep's wool, which works as a reinforcing component. Now to apply modern materials that give the best result - refractory clay "Mertel MP-18" and liquid glass.

The consistency of the mixture becomes thick

Finishing is performed according to the following algorithm:


You will need to apply several coats to get an even coverage. Do not strive to make the surface perfectly flat, the main task is to ensure smoothness and remove flowability so that sand does not get into the pita bread.

Budget options for tandoor

One of the easiest ways to make a heat-intensive cooking oven is to use a 200-liter iron barrel as a frame. The base will be an old automobile wheel, partially dug into the ground; there is no need to build a reinforced concrete foundation.

Manufacturing technology is simple:


Under certain conditions, the tandoor is laid out of bricks without the use of mortar. The stones are placed "on the butt" in the form of a semicircle and tied with wire. The procedure is as follows:


Advice. In order for the mortar to adhere well to the brick walls, moisten the latter with plenty of water from a spray bottle.

In fact, budget construction methods make it possible to create an imitation of a tandoor, since they differ in a cylindrical or conical shape. As mentioned at the beginning of the article, a real Asian stove should have an amphora or jug-shaped firebox. If this was not achieved, you get a simple heat-consuming stove for cooking.

Therefore craftsmen, having decided to build a tandoor on the site with his own hands, pay attention to its closest relative - the Armenian tonir. He made of fireclay bricks and has thicker walls, which allows you to keep the heat longer. Of course, the tonir takes longer to warm up, but, unlike Central Asia, there is no shortage of firewood in the middle latitudes.

Materials required for masonry

Unlike the usual brazier, the tandoor is a universal design, so you will need different materials to make it yourself.

  • Refractory fireclay bricks are required for the walls of the structure, its quantity depends on the size and thickness of the wall and ranges from 300 to 1200 pieces.
  • Masonry mortar can be prepared with your own hands based on clay and sifted sand, or you can buy a ready-made heat-resistant compound based on fireclay in a building supply store.
  • The finished oven is coated on the outside with clay mortar, you can finish it natural stone or mosaic. If flat cakes or samsa are baked in the oven, coating with heat-resistant clay is also needed from the inside.
  • The foundation for the furnace is made of concrete reinforced with a bar.
  • Another necessary element is a blower, it can also be folded from brick or made from cutting a pipe with a diameter of 100 mm or more.
  • You will also need wooden block and boards for making a template according to which masonry will be performed. Without a template, it is difficult to make an even circle and an upper vault.

How to fold: technology

The construction of a brick tandoor oven takes several weeks. Since the stove, like the barbecue, is placed outside, it is better to choose warm summer months for work, since work with masonry mortar is possible only at positive temperatures.

Foundation

An important stage in the construction of a tandoor oven is the construction of a solid foundation. The foundation is necessary so that during seasonal soil movements there is no destruction of the masonry. It can be made from a ready-made concrete slab, but more often the foundation is poured into the ground according to the size of the future furnace.

  1. First of all, markings are made on the selected site: they indicate the contours of the tandoor and, if desired, the platform for approaching it.
  2. Remove the sod from the designated area. If the soil is sandy, then it is enough to level it. In clay and loam, another 10-15 cm of soil is removed and the resulting trench is covered with sand. Spilled with water and rammed.
  3. In dry areas, you can make the foundation flush with the ground. If water stagnation is possible, it is better to raise it above the ground by 10-15 cm, for which a formwork is made of boards along the contour of the base.
  4. Reinforcement is laid from a bar with a diameter of 10-12 mm in the form of a lattice at a distance of 15-20 cm. The bar is knitted together with annealed wire.
  5. Fill the formwork with concrete, level the surface with a board and a level, and sprinkle the top with a thin layer of clean cement - this will make it more water resistant.
  6. Exactly in the center of the base, a recess is made under the tandoor - a template will be installed in it when laying.
  7. Leave to dry under the film, moisturizing in hot weather as the top layer dries. The curing time is at least two weeks, after which the construction of the tandoor can begin.

Template preparation

While the foundation of the furnace dries and gains strength, you can start preparing a template for laying. Since the brick is laid out in a circle, it will be difficult to maintain the same radius everywhere without a template.

For its manufacture, it is necessary to make calculations and drawings, since the convenience of masonry will depend on the correct execution of the template. The main condition is that the distance between the levels of the template must correspond to the height of the brick row.

The tandoor is made of brick placed on a short edge. In this case, the height of the row will be 26 cm, taking into account the masonry seam. Thus, it is advisable to make the height of the straight part of the tandoor 2 rows or 52 cm, after which the narrowing of its arch begins, equal in height to two more rows. You can make a template from a bar and boards or from plywood.

It is necessary to maintain a right angle in its lower part so that the furnace walls turn out to be even along the entire circumference!

Tandoor masonry

You can lay out the tandoor with your own hands over the weekend, if you prepare everything in advance necessary materials and tool. Part of the brick to create the vault will need to be cut, so you need a grinder with a circle around the stone. Also for laying you need a trowel, a hammer with a rubber head and a level. You will need two containers: for kneading the clay mortar and for the water into which the bricks are dipped.

  • Knead a solution of clay, sand and water with the addition of salt - a tablespoon per bucket. The ratio of clay to sand depends on its fat content. The finished solution should roll into a ball and, when falling onto a hard surface from a height of 30-40 cm, flatten with the formation of small cracks, but not crumble. If there is too much clay in the mortar, the masonry joints will begin to crack when fired. You can also use a ready-made dry heat-resistant mixture for laying furnaces.
  • Expose the bricks of the first row according to the pattern to dry. They are placed on a narrow edge with the end to the center, so that the wall turns out to be half a brick. To create roundings, the inner radius must have a minimum clearance, the outer radius should be wider.

  • After the bricks are exposed and aligned, they are taken out one by one from the row, briefly dipped in cold water. clean water- the active release of bubbles should stop. After that, a mortar is applied to the brick from three sides - the bottom and side, and put it back in a row. This is done consistently with all the bricks in a row, checking them against the pattern.
  • The finished row is checked again and, if necessary, leveled. Clay mortar dries for a long time, so you can take your time and set the bricks with high quality. The seams from the outside are filled with mortar and embroidered - subsequently, when finishing, the mortar will hold better.

  • The second row repeats the first, and it is laid in the same way, but to increase its strength, it is made with dressing, shifting the brick by half. In the second row, a blower is made from a piece of pipe. To do this, two bricks in a row are cut in half, leaving a window under the pipe. Install a pipe - blower. Fix it with a solution.
  • In the third row, the formation of the tandoor arch begins. In order to give it a slope, the lower part of all bricks is slightly filed at an angle with a grinder. If you calculate the angle well, you won’t have to cut the next row.

  • The number of bricks in the third and fourth row is reduced due to the reduction in diameter. Therefore, the dressing in them will turn out to be incomplete, and the shift relative to the previous row is done by 1/3 of the brick.
  • After the masonry is completed, the oven is dried until the masonry mortar is completely dry. In hot weather, for uniform drying, you need to moisten the masonry or cover it with a film.

Finishing and kiln firing

The tandoor, made by hand from one row of fireclay bricks, although it has good heat capacity, is additionally coated with clay mortar from the outside to improve this characteristic, and if it is planned to bake pita bread or cakes on its walls, then from the inside.

For finishing use the usual masonry mortar, but kneaded to a thick state, resembling plasticine in consistency. For plasticity, table salt is added to it.

Before coating brickwork moisturize spraying from a spray bottle. The solution is applied with a layer not exceeding 1 cm, a thicker layer may crack when firing the stove. The neck is also coated with rounding. To give the stove a decorative effect, you can lay it out on the outside with mosaics or natural stone, as in the photo.

Drying the finished tandoor is done in the same way as after laying, for at least two weeks. After the initial drying, the finished stove is heated, first with paper, dry wood shavings or wood chips, adding fuel in small portions until the walls are moderately heated. After each furnace, it is cooled, and the next day it is heated again. So the oven is dried for two weeks.
